Save this one for the next time you need an easy crowd-pleasing dessert with almost no effort. 🙌 Peanut Butter Ice Cream Cookie Sandwiches Yield: 24 sandwiches Ingredients 2 boxes Kineret cookie dough 56 oz Abe’s non-dairy vanilla ice cream 1 cup creamy peanut butter Directions Bake the cookie dough according to package directions and let the cookies cool completely. Let the ice cream soften slightly. Transfer the ice cream to a food processor, add the peanut butter, and blend until smooth and fully combined. Transfer the peanut butter ice cream back into the ice cream container and freeze until firm. Scoop the ice cream onto the bottom of one cooled cookie. Top with another cookie and gently press together. Freeze until firm and keep frozen until ready to serve.
